Lemon Herb Roast Chicken
Teringin plak nak buat roast chicken dlm majalah ni. resepi ni dalam majalah PEARL jusco issue 57 november 2010. Gambar Amber Chia kat muka depan nye. Nampak cam sedap je kan.. try buat.
tengok macam best kan.. nak resepi ? pada yg nampak tu tengok je la kat dalam gambar tu. klu yg mata nye tak berapa bole nak zoom tu bole le kopipes resipi dlm majalah ni kat bawah.
Lemon Herb Roast Chicken
preparation time ; 20minutes
cooking time; 1 hour 20 minutes
served 5 –6

1.5kg whole chicken, rub salt over chicken and inside cavity
100g butter, room temperature
1 lemon rind, pick rind all over with skewer
2 tbsp mixed herb
800g Potatoes, peeled and cut into pieces
2 tbsp plain flour
some vine cherry tomatoes

preheat oven to 200 C

- combine butter with herb and lemon rind. Using your fingers, gently separate chicken skin from the flesh over the breast. Push herb butter under the skin and spread evenly over the breast.Put lemon into chicken cavity.
- Place chicken onto one side on the roasting pan, loosely cover chicken with a foil. Place potatoes on a piece of foil and put it next to the chicken.
- Cook chicken covered for 1 hour 10 minutes, remove foil from chicken and continue to roast chicken uncovered for 20 minutes. At the same time, remove potatoes and keep warm.
- Drain pan juice into a small saucepan. Sprinkle flour over it and cook medium fire, stirring all the time. Add a cup of hot water until gravy is smooth. Season with salt and pepper.
- serve roast chicken with gravy, potatoes and tomatoes on the side.
